Remote Learning Lunch Ideas

Ingredients: 

Make your favorite pizza dough recipe or by pre-made refrigerated pizza dough ( I have made both ways, I like the homemade dough because I can make more for less money) 

Fillings: 

Pepperoni and cheese 

Ham and cheese

Veggies and cheese 

Veggies, ham, and cheese 

Spinach, feta, greek olives 

Rotisserie chicken, blue cheese and Franks Red Hot 

Rotisserie chicken, swiss and ham 


You can really fill them with whatever your people like


Directions: 

Make your dough (or buy your dough) 

Roll out into 4x6 rectangle 

Fill them up! Lay your ingredients on one side and fold the other half of your dough over the fillings. 

Seal the dough, make sure you seal it well so your toppings don't seep out. I pinch the seam closed and then press closed with a fork.

Brush the pockets with egg so they are pretty and shiny

Cut 2-3 slits into the top of your pockets

Bake! 450 for about 20/25  minutes, it will depend on how dark you like them.

Let them cool and then place on a cookies sheet, place the pockets into the freezer for about 30 minutes. Once they are cooled well, put them into freezer bags and store in the freezer. If you freeze them some before you bag them they will not stick together in the freezer bag and your kids can just grab one to make for lunch. 

Reheat: 

My kids just microwave them but you can wrap in foil and reheat in the oven or toaster oven as well
