Bored Boards ~ Shaking Up Quarantine Dinners!

4 Boards For Dinner

I cannot with all of the cooking anymore. I am running out of ideas to keep it fun and engaging. This week we decided to embrace the boredom and make DIY boards for dinner. We dubbed them "Bored Boards" and laid out all of the fixings for everyone to make their own dinner the way they wanted it. These are easy to recreate at home with the toppings you kiddos like! 


Mediterranean Board

This board was packed with healthy and easy Mediterranean delights~ 

  • Homemade Falafel
  • Frozen turkey meatballs from Trader Joes that I cook in a pan and season with Greek seasoning blend 
  • Israeli Salad~diced tomatoes and cucumbers tossed with olive oil, a little garlic and some salt to taste. You can squeeze a lemon on it as well 
  • Crumbled Feta 
  • Greek Olives 
  • Hummus
  • Tzatziki Sauce~I make it from scratch but you can also buy it premade. It's pretty easy to make
  • Homemade Pita~ It is not hard to make pita and totally worth it. Tastes so much better and that warm pita is awesome 

Make Your Own Nachos Board

 

Pretty simple, put out what your family likes best on their nachos and go for it~ We used: 

  • Cuban Black Beans 
  • Guac
  • Sour Cream 
  • 2 Kinds of Salsa 
  • Shredded Cheese (we used cheddar and jalapeno jack) 
  • Queso (it didn't make it to the board in time for the picture) 
  • Chips (I like the ones that hold the toppings in them!) 
  • Shredded Chicken 
  • Jalapenos 
  • Lettuce 
  • Tomatoes 

Make Your Own Sandwich and Salad Board

 I love this one for cleaning out the fridge. Everyone made their own sandwich which I grilled like a panini. For the make your own salad we have a huge bowl similar to what they have at the salad places and a mezzaluna. The kids love to throw what they want into the bowl and chop it up!

Sandwich Board

  • Variety of Cheeses 
  • Salami
  • Pepperoni 
  • Turkey 
  • Roast Beef 
  • Ham 
  • Banana Peppers 
  • Saurkraut 
  • Cole Slaw 
  • Good Crusty Bread 

Salad Board: This one is open to whatever your family likes in a salad. We make sure to have some options we would not usually put in a regular dinner salad like olives, salad peppers, cheeses etc, 


Make Your Own Pizza Board

This one is a given whenever you have a DIY dinner night. We decided to mix it up and grill the pizzas after the kids made their dough. I don't have a picture of this board because I forgot to take it before they made their pizzas #momfail

Pizza Toppings: 

  • Fresh Mozzarella 
  • Shredded Mozzarella
  • Sauce ( I was lazy and used jarred pasta sauce) 
  • Sausage 
  • Bacon 
  • Pepperoni
  • Peppers 
  • Onions 
  • Mushrooms 
  • Sliced Tomatoes 
  • Fresh Basil 

Creating the boards was a great activity for the whole family, they are a great solution also when you have a picky eater. Here are a few more ideas you can use to make boards!
